Over the Thanksgiving holiday, I had had the opportunity to try a vegan sweet potato pie with whipped coconut cream. It wasn't necessarily meant to be a vegan dish, but my sister-in-law is avoiding eggs, milk, and butter to try to troubleshoot a potential allergy in her newborn. The pie was good, but the thing I found most interesting was the whipped "cream".
I'd never heard of coconut whipping cream, but you can get it at most grocery stores apparently.
Add a little powdered sugar, a few drops of vanilla and whip it like you would regular whipping cream.
It didn't come out quite as firm as typical whipped cream, but we may have quit too early, since we didn't want to risk overworking it. On the whole it was a good substitution for those wanting a vegan/non-dairy alternative to whipping cream.
