This is a great breakfast for when you have an extra 10 minutes on your hands! I'm still working on perfecting this recipe, as it always seems to come out chewy when I feel that muesli should have a decent crunch to it. If you have any tips, let me know :)
RECIPE: Serves 1- you can make more if you want to store it for an easy go-to in the mornings!
- 1 cup rolled oats
- 1/4 cup brown rice puffs (find these in the health food section at woolies- it was $4 for a huge bag!)
- 2 tbsp. Coconut
- 1 tbsp. LSA meal
- 1 tsp chia seeds
- 2 dates- finely chopped
- 1/2 cup broken blueberries
- 1 tsp. ground cinnamon
- 1 tsp. ground ginger
- Dash of almond milk
- 1 tbsp. maple syrup
- Preheat the oven to 180'
- In a large bowl, mix all dry ingredients together, including the blueberries.
- Add enough almond milk to loosely bind the ingredients and spread onto a lined tray.
- Drizzle maple syrup over the top and grill for 5-8 minutes, removing every 2 or so minutes to flip the mix so it doesn't burn.
- Allow to cool for 5 minutes and serve as you please - I served mine with a banana and some chopped pecans and almonds, but it would work great with some coconut yoghurt too!
