🍽 Stay healthy! πŸ‘¨ Delicious plum spice cake that will satisfy your sweet tooth πŸŽ‚πŸ° - no refined ingredients used

Dear steemians and food aficionados with a sweet tooth,🍬

Right now it is winter in Vienna, my home city. It is really cold outside. Β· ❄ β›„

To console myself, I take the cold weather as an excuse to make my favourite cake. πŸ˜‰haha

And the best of it - I will share it with you! πŸ˜†

The cake we will be baking is very special. Why? Because it is actually very healthy! We will not use any refined products such as table sugar, oil and white wheat flour.

We will use ripe bananas instead of refined table sugar (it is important that they have black spots on the peel, otherwise they are not sweet enough to replace the sugar). Instead of oil we will use nut butter. And instead of white flour we will use wholewheat flour.

Although it is not super sweet, it works wonders to satisfy your sweet tooth. And ... it's super healthy! An unusual combination, right? Perfect! 🀣

The texture of this cake is also very special - it is super moist πŸ’¦ and has a very rich feel to it!

Finally, another unique feature is that it includes a lot of delicious spices - which are not only excellent sources of phytonutrients and antioxidants but also add some unique taste to it!

So, let's get it on! Here is the list of ingredients.

Ingredients

  • 5 ripe bananas 🍌
  • 500g wholemeal flour (I used rye, you can also use wheat)
  • 26g wheat gluten
  • 2 tbsp psyllium seed husks 🌱 (optional)
  • 25g ground flax seed 🌱
  • 3 tbsp of nut butter πŸ₯œ(I used peanut butter, but you could use anything from tahin to almond butter)
  • 1 sachet of baking soda
  • 5 tbsp of cocoa powder
  • 1 tbsp cinnamon (I prefer Ceylon to Cassia)
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground cloves
  • 1/4 tsp ground fenugreek seeds
  • a pinch of salt
  • 25 ripe plums
  • 1/2 liter of water πŸ’¦ (just an estimation, it may be way off, depending on your flour - add it step by step and evaluate after each step if it is enough)

Procedure for the dough

  • Put the flour into a bowl.
  • Add all the dry ingriedients to it: gluten, psyllium, ground flax, baking soda, cocoa, cinnamon, turmeric, cardamom, cloves, fenugreek, salt and mix it thoroughly!
  • Add some water.
  • Add the nut butter and mix it all up.
  • Squish the bananas into mush and add them.
  • After mixing it all up again, taste a little bit of the dough if it is sweet enough for you. If not, add some more bananas.
  • If it is too dry, add some water and mix it again - but be careful, do not add too much water.

Last steps

  • Take some parchment paper and put it on the oven sheet.
  • Scatter the dough evenly on the oven sheet.
  • Cut the plums into halves and take out the pits.
  • Place the halved plums on the dough.

  • Now put it into the oven! (I chose 200Β°C for 30 minutes, but it could be completely different for your oven. Be sure that it does not get burned!)

Hi Chris! Thanks for such a great post. Dealing with the sweet stuff is one of the hardest parts of transitioning to a whole food lifestyle. This is such a great recipe and will really be helpful to many folks here that need a tasty bridge to clean eating. I wish I could sneak a slice! :P
