LATINO BLACK BEAN & CORN SWEET BOATATOES! A Colourful & Delicious Vegan Lunch!

Looking for a tasty Summer's day lunch packed with protein, fibre and essential vitamins and minerals? Check out this quick, fun recipe that's great for kids and old sailors alike...

Succulent, stuffed sweet potatoes are a perfect lunch and easy to prepare - an excellent alternative to the average jacket potato, this orange delight is a complex carbohydrate served with black beans and is great for keeping those insulin levels in check!

Topped with tomato, onion, sweetcorn, avocado and nut dressing - this is a great approach to getting in your 5 servings of fruit/veg a day, plus some healthy fats.

Overall, this dish is packed with nutrients, including Potassium, Vitamin A, manganese, copper, pantothenic acid, phosphorus and B Vitamins, plus it's gluten free too!

Ingredients for two:

  • 2 Large sweet potatoes
  • 1/2 cup canned or cooked black beans (75 g)
  • 1/2 cup canned sweetcorn kernels (70 g)
  • 1 tomato, chopped
  • 1/4 red onion, chopped
  • Fresh parsley to taste, chopped
  • Creamy Tahini and Almond nut dressing

Instructions for sweet potatoes and topping


  • Preheat the oven to 200ºC.
  • Wash the sweet potatoes and prick each one a couple of times with a fork
  • Bake them on a baking sheet for 50 minute until tender
  • Heat precooked sweetcorn and black beans separately in saucepans with water on medium heat
  • Remove potatoes from oven and cut in half
  • Top with cooked black beans, corn and chopped avocado
  • Add chopped tomato, onion, parsley and nut dressing and serve immediately.

These stuffed sweet potatoes are best when fresh, although you can keep leftovers separately in the fridge for up to 5 days.

Instructions for Creamy Tahini and Almond nut dressing


Ingredients:

  • 1/4 cup water
  • 4 tablespoon of tahini
  • 1 tablespoon of almond nut butter
  • 1 tablespoon of lemon juice
  • 1 tablespoon of soy sauce

Place all the ingredients in a bowl and mix with a fork or whisk until well combined.
