SUMMER BERRY CHEESECAKE - RECIPE - GF - SUGAR FREE - HEALTHY NO-BAKE CAKE

Hi darling!! The berry season is here! And I am celebrating with a crazy easy and delicious berry cheesecake! Recipe for you guys below.

I am working on my homepage from where I want to start to sell some of my cakes. I will begin with only Vienna, to see if people are interested. it is a very fun and exciting project, to try out something new. I get quite a few requests from people who see pictures of my cakes, so I thought why not try to sell them instead of just sharing the recipes?

Would you order my cakes if I would deliver them to you, or do you prefer making your own?

I have set a goal to get all my income from my passion with recipe development, food photography and blogging, and on 12 of July, I will have this as my fulltime job so to say. So I am working more creative right now to reach out to companies and future customers. If you have tips for me, I would love to read all of them! Perhaps some of you already made this journey and can support me with your experience and knowledge? I am really thankful for every kind of support I can get!

Now lets head over to the recipe!

So this cake is super simple to make, and really, just try it out, you cant get wrong with this one! (And your guests or family will love it!)
The layers are with blueberries, strawberries and a vanilla layer! Absolute adore the berries at the moment!
And the crust is also a very special one, with roasted hazelnuts (by now you probably know my addiction to them), cacao, coconut shred, and dates! My favorite combination at all time!

Berry Cheesecake with a chocolate-hazelnut crust

Recipe

Ingredients:

Base

  • 150 g hazelnuts
  • 80 g dates (pitted)
  • 40 g coconut shred
  • 2 tbsp cacao

Filling

  • 1 cup cashew nuts (soak them overnight, rinse and drain)
  • 1/2 cup plantbased milk or coconut cream
  • 1/2 cup virgin coconut oil
  • 1/4 cup maple syrup
  • 1/4 tsp grounded vanilla
  • 200 g strawberries
  • 80 g blueberries

Method:

Start with the crust:

  • Roast the hazelnuts at 200-degree Celsius for 10 minutes. Wait until the nuts are cooled down, then remove the loose skin.
  • Blend the hazelnuts together with the dates, cacao and coconut shred until it sticks together well.

  • Press down into a baking pan covered with parchment paper or a silicon mold. Set aside. (I choose a quite big bowl because I still don't have a silicon mold for cakes. Go for what you have!)

I tried to decorate the mold with some sliced strawberries, but it didn't work out well with the parchment paper. But if you have a silicone mold, you could try this!

  • Filling
  • Blend the soaked cashew nuts together with the coconut oil (melted), plantbased milk, vanilla and maple syrup.
  • Blend for some minutes until totally creamy and smooth!

  • Divide the cream in 3.

  • Blend one part with the blueberries, one other part with the strawberries. Let the last bowl stay plain. Taste the plain one and add a little more vanilla if not enough.

  • Pour the heaviest layer on top of the base, and alternately the other 2 layers on top of the first one. Make some kind of design if you like to.
  • Hit the mold a few times against the table to get rid of air bubbles.

  • Decorate with sliced strawberries if you like to.

  • Let the cake set in the freezer for 3 hours or overnight.
  • Defrost the cake depending on how frozen it is, until you easily can cut it with a knife.
  • Storage in the fridge so you don't need to defrost it before serving.
  • Enjoy!!!

Why I am up this late? Because my little boy sleeps very bad at the moment, and wakes me up several times during the night, and keep me awake. It takes (again) about 2 or 3 hours to get him to sleep in the evening, which really frustrates me and makes me tired. Often I fell asleep with him in the evening when he finally finds some peace. So I haven't been able to work in the evenings and in the morning I have prioritized sleep before work (mommy life), so I try to make some things tonight instead. To be a mommy means to be very flexible all the time, and just go with the flow. He is now going to have his second birthday next week and to be honest with you, I haven't sleep one whole night since his birth. That is really alright, but what sometimes really frustrates me, is that it always takes hours to get him to sleep, and it has always been that way. What is causing the frustration? Not he, of course, it is my expectations that cause the frustration. I expect him to sleep at 8 or latest 9. I always wish for a quiet evening where I can spend some alone time with my partner, but we don't get much of it. To get children is the biggest challenge in a relationship, and also in your life. Everything that normally is not shown comes up to the surface and you just need to learn how to deal with it, how to handle your own emotions and the moods from your small family. I am forever grateful for the challenging gift being a mom, that is the most powerful and beautiful life experience that exists. And the most life-changing. At least for me!

If I would live anywhere near you and you would sell your cakes/ pancakes etc. I would definitely be a regular customer :) But I also love to make my own creations as well as 'steal' recipes from others and either try to make exactly the same, or my own variations. My kids are all chefs too! That being said: this cake looks absolutely amazing and it had my mouth watering from the first moment I laid my eyes on it. It couldn't come at a more perfect time, because it will be my youngest son's birthday next Sunday and he asked for a chocolate/strawberry cake. This will be a hit! I completely forgot to reply to your question last week if I made the pancakes. I DID! and they didn't turn out as beautiful as your but I never heard the kids complain until they were gone, so I take it as a success. I have a question, something I've been wondering about for some time but can't seem to find the answer to. If you have any ideas, I'd love to hear from you. My son has been asking to have a themed cake...You know those ones you see with spiderman or batman on the top. Now, I used to make these, but since they are all laced with sugar (the icing etc.) and food colouring I stopped making them in order to get rid of sugars/artificial products. Do you have any idea how to still do something similar but without using all that crap? Thank you for sharing this recipe, will keep you updated on the outcome.

Wow that is such great feedback! Really happy your kids enjoyed the pancakes!! About that cake, I am sure the kids will enjoy the berry cheesecake, it is such a simple and smooth cake that has a lot of berry taste which kids usually love. And that chocolate crust;)
I have actually never seen or heard about a themed cake that is healthy before, I have never made one myself either.

If she is able to make such beautiful flower-themed cakes, I am sure you can create whatever with the same method and ingredients! I hope you feel inspired by her, and maybe try making your own! If you make a raw cashew-buttercream colored with berry powders or blue spirulina, you will be able to create magic! (I will also try that one day, lol!)
