Vegan Breakfast: Potatoes O'Brien w/ Cactus Pad

Hey there Steemians!

This is what I ate for breakfast: I cooked up some frozen Potatoes O'Brien - kind of like hash browns and I remembered that yesterday when I was mowing the lawn I had accidentally ripped off a cactus pad from my main spineless prickly-pear cactus plant.

The pad that fell off was a little more mature than I would've picked to add to a meal; the more mature ones are usually more bitter, meaning I would have to cook it longer

My wife didn't want these in her food, so I cut them in big chunks to be able to separate from her food at the end

Mmmm it was good. I added a little ketchup and hot sauce after this picture to give it a little extra flavor. I also added curry powder and no salt seasoning while it was cooking

I don't like to waste anything, and I was going to throw the cactus pad away, but figured I should cook it and eat it :-)

Yeah a lot of times in Mexican culture, they add cactus pad to their eggs. Since I don't eat eggs, I thought I would add to potatoes :)

Does potato chips re healthy?

Well, usually potato chips aren't healthy because they're fried in oil, but these aren't potato chips. They're like hash browns. I did use a tiny bit of oil so it wouldn't stick, but definitely didn't fry it in oil like they do chips or fries.
