Vegan Sugar Cookies for Easter and Springtime

We made a few bunny and flower sugar cookies to get ready for Spring and Easter this year

This is my post to celebrate #veganwednesday. I decided to have fun and play with the backgrounds a bit. I hope you like them.

On the cookie side, I have been having a challenge with the icing and ingredients in the cookie this past year. The tough part is after all the work is done and maintaining colour uniformity / balance / integrity with changing humidity. Finding the right balance of vegan frosting and dryness of the sugar cookie for icing is a moving target. We have been working on this for a while and are still improving our craft.

If anyone has tips or tricks on how to deal with this issue with vegan baking in handing moisture, the oils and preventing separation / blotching of the icing when cooled after the cookie has been made and decorated, I'd love to hear.

They key being it is 100% vegan frosting and so are the sugar cookies. And, we want them to taste great too... A vegan sugar cookie challenge.. #vegancookiechallenge
