I made a lemon cake with lemon sirope and lemon everything... And OH MA GAWD, couldn't think of a better way to start my week.
To make this lemon deliciousness you'll need:
- 1 and 1/2 cups of flour (all-purpose is good)
- 1 cup of Sugar
- 2 Eggs
- Fresh lemon juice (to taste)
- Salt
- 1/2 of cup of melted butter
- 1 teaspoon of baking powder
- 1/2 cup of milk
To make the sirope you'll need:
- 1/4 of a cup of sugar
- 1/3 of a cup of lemon juice
To start, mix the sugar with the melted butter, in a separate bowl beat well the eggs and add them to the sugar and butter with the lemon juice to taste (I recommend adding freshly squeezed lemon juice), add the salt, flour, baking powder and milk and incorporate everything until you have a smooth mixture.
Grab your cake pan, grease it (I also coat it with a thin layer of flour after greasing it, just like my gandma used to) and transfer your cake mix.
Put it in a hot oven for about 45 minutes or until it turns golden brown.
While your cake is baking, mix a 1/4 of a cup of sugar with 1/3 of a cup of lemon juice; after your cake is out of the oven and still warm, poke it with a fork or a toothpick and drizzle your sirope on top.
