In 1983 McDonald's switched from frying French Fries in beef tallow to vegetable oil and they never tasted the same. Are you old enough to experience the disappointment? A few days ago I went to a local butcher and purchased 5 pounds of beef "suet". This is beef fat with no meat in it. You should know by now, if you have been paying attention, that saturated fat does not cause heart disease. I put the fat into a crock pot on low heat and over the next 5-6 hours skimmed off almost two quarts of beef fat. Last night I deep fried Russet potato strips sprinkled them with salt and enjoyed the best French fries I've had in many years. Next I'll be buying 5 pounds of pork fat and cold smoking it before rendering it down. I'll use it like you would bacon grease and also in the deep fryer.

On the outside they were and soft inside. I also made up a Drakes batter with some Lawry's seasoned salt added and did some onion rings. They were REALLY good. Since last night I've learned that I can improve the crunchy outside by soaking the fries in cold water for an hour before frying them. Important to dry them off before frying though. Next I'll try cold smoked pork fat and see what happens.

Indeed. That is what the recipe instructions say for the very best results, but my results without the cold water soak were pretty good so I don't think I'll risk the "explosions" as you put it.
