Ingredients:
500g lamb meat (preferably shoulder or leg), cut into small pieces & mash them
1 cup plain yogurt
2 medium onions, finely chopped
2 tablespoons ginger-garlic paste
2 teaspoons Kashmiri red chili powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon fennel seeds
1 teaspoon garam masala
Salt, to taste
2 tablespoons vegetable oil
1 tablespoon ghee (clarified butter)
2 cups water
Chopped coriander leaves, for garnish
Instructions:
In a large mixing bowl, whisk together the yogurt, ginger-garlic paste, cumin powder, coriander powder, fennel seeds, garam masala, and Kashmiri red chili powder. Add salt to taste and mix well.
Add the lamb pieces to the yogurt marinade and mix well to coat each piece. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.
Heat the vegetable oil and ghee in a large, heavy-bottomed pan or Dutch oven over medium heat. Add the finely chopped onions and sauté until they turn golden brown and soft.
Add the marinated lamb pieces to the pan and sauté for 5-7 minutes, or until the meat is browned on all sides.
Add 2 cups of water to the pan and stir well. Bring the mixture to a boil, then reduce the heat to low and cover the pan with a tight-fitting lid.
Let the stew simmer for 1-2 hours, stirring occasionally, or until the meat is tender and falls off the bone.
Once the lamb is cooked through, remove the lid and cook for another 10-15 minutes on medium-high heat to thicken the gravy.
Garnish with chopped coriander leaves and serve hot with rice or naan bread.
