I've read about slang already, but I'm still not sure how to write it without the character's dialogue falling into the same old stereotypes. Is it actually possible to "write" an accent? Thank you for helping out a novice writer!

You can write phonetically, but that seems like a lot of wasted effort. I would just write normally, and search for colloquialisms you can throw in, then give the script to a native australian speaker when you're done to edit and make sure it makes sense.
