These gluten free zucchini pancakes are so easy to make. Kids and adults love them. Initially my mother was making them with raw potatoes, but I wanted something lighter and with an option to include some "greens" in my kids dish.
So the recipe is:
1-2 zucchinis, peeled and grated
1/2 cup of sweetcorn
1 egg
1-2 spoons of potato flour (any gluten free flour is good)
salt and pepper to taste
2-3 spoons of oil to fry
Put grated zucchinis in the bowl, add generous amount of salt, mix and leave for 10-15 minutes so the juice is released. Pour out most of the juice, but don't squeeze it. Add remaining ingredients and mix well. You should have kind of "watery dough".
Preheat your skillet with oil and with a big spoon put 3-4 small pancakes on it. Fry on one side and gently turn over. Once fried, put on a plate with paper towel to absorb the oil. Repeat with the remaining dough.
Serve hot or cold with a variety of relishes or sauces.

Thank you. You may add really anything there...peas, carrots or any "soft" veggie of your choice...if you want to add cauliflower or broccoli you need to pre-cook it first... ;-)
