Scrambled Eggs and Vegetables Medley with a Hint of Basmati Rice

As the spring months are sneaking in--it is time to pull out one of my favorite recipes. It's quite easy and hearty. And, most importantly: it's nutritious and affordable. These are virtues that I can get behind!

So in some quick steps. Or, if you want to skip the rice portion--it's even quicker.

STEPS:

  1. on a skillet--pull out a pack of frozen vegetables that you can get from your local grocery store. Where I live, I can get 10 packets for ten dollars. I first soak the vegetables in a pan of warm water. I'd like them to not be frozen for this recipe.

  2. Now bring them to your heated pan and saute them. Use any kind of oil. IN my case, I use Olive. Please make sure that you're doing this on low to medium heat.

  3. As the saute process is going on. Add some salt, black pepper, and ANY other types of spices that you like. This depends entirely on what's available in your kitchen cabinet; and, what can be easily attainable. I like to add: chopped basil, Italian Seasoning powder, garlic (freshly cut) and a ginger.

  4. Continue to saute with all the spices added--then, using your spatula or spoon or whatever! Press the veggies down on the saute pan. Then, raise the temperature to high. The point here is that we'd like to get a little char on the veggies.

  5. Take 3-4 Eggs. I use 2 yolks. Crack the eggs directly on top of the veggie medley on the heating pan. Then, using whatever tools you have, stir them occasionally for 1 minute on low to medium heat to high heat! Raise that temperature sequentially.

  6. Add any type of cheese to this mix. Ensuring that the cheese, too, is being heated on your pan. In my case, I used chopped cheddar.

  7. After the eggs have been scrambled to the consistency that you like---

  8. Pour them onto a nice plate. AND, let sit for 2-3 minutes.

  9. Sit down and eat with peace and joy. Knowing that you are special and deserve good things.
