I have canned two items so far and I would consider the first to be a home run.
Watermelon Rind Pickles. Yeah! The white stuff we avoid eating is what this recipe is about using and it is the bomb. They are sweet, but not too sweet. They are perfect. I grew up in the South and had these all summer long.
The second was chicken. Okay, the only thing I would consider changing about this is the texture of the chicken. Next time I will shred the chicken before canning it. I may do a raw pack. Otherwise, it was sealed perfectly. However, I did forget to put the vinegar in the water to keep the jar clear. We will use the chicken in goulash, chili, and pasta sauce.
My next project will be mangos. I have been looking for recipes for mango jam and butter. I think I have a recipe for the butter. I am also going to put mango in jars with light syrup. After that will be corn.
I have conquered my fear of pressure cookers. I grew up with my mom using one, but she would never show me how to use it. Instead, she traumatized me by telling me it would explode if I touched. Yeah! Last year I got a pressure cooker for Christmas called Insta Pot and I love it.
