That's a crazy and curryied-ish way to cook some banana peels. Yeah. The rest you use for an ice-cream or something.
What I used: 7 little bananas' peels, a tablespoon of palm oil, 1 garlic clove quite shredded, 1/4 onion sliced into somewhat little pieces, half a tomato sliced into little cubes, 1/2 tablespoon of saffron, the same for garlic, 1/2 a teaspoon of cayenne pepper, 1/4 a teaspoon of grated nutmeg, 1 teaspoon of cumin, the same for cinnamon and fenugreek, 1/2 a teaspoon of za'atar, 1 piece of palmetto sliced into little cubes, 2 grated medium carrots, 10 medium to large lemonvine leaves sliced the way I thought I should, 6 olives sliced into rings and a mix of parsley, scallion, sage and thyme at the end. Quite a delicious mess.
First things first: peel your bananas, pick up a fork to rip off the white (internal) side of the skins. Shred them into little spices and let them rest inside a bowl with water and vinegar for at least 15min. Then grate, slice, shred, hack and slash the rest of the ingredients in the meanwhile.
Time to heat things up. Choose your favorite frying pan and heat the oil. Then add the garlic and the onion and braise it like you should. After that, add everything minus the mixed herbs, a teaspoon of salt (or more if you miss it), mix a little bit then cover it for about 1-2min. Uncover and mix it again until it's soft enough. Turn the stove off, add the herbs, a little bit of olive oil (you choose how much) and mix it one more time.
Finally, put some fancy lettuce, cabbage, radicchio or kale leaves on a bowl and cover it with your hot salad. Make it look pretty enough for your mother. That's it. Oh, your vegan friends will love it.
