Recipe:
Method of preparation- Dry roast 1 cup semolina for 5-6mins. I used fine suji. You can make with thick rava or broken wheat also. It's quick to make with fine suji.
In a vessel heat 2 tbsp of ghee and 1 tbsp oil. Add half tsp mustard seeds when they crackle add 1/4 tsp urad dal, few curry leaves, 1 tsp grated ginger, 1 medium chopped onion, 1 slit green chilli. Saute for 2mins. Add roasted semolina and stir. You can add veggies of ur choice ( green peas, carrot) I added 1 grated carrot and finely chopped coriander leaves.
In a sauce pan boil 2 cups of water. To this add salt to taste, 1 tbsp powdered jaggery or sugar, handful of freshly grated coconut. When it boils add this to the rava mixture and stir quickly. Reduce the flame. Close the lid for 2 more mins. When all the water gets absorbed and rava gets cooked. Serve hot with little ghee on top. I love to have with masala chudwa ( poha or flattened rice flakes )
