HOPS AND THE LUPULIN GLANDS

Hop, are used primarily as a bittering, flavouring and stability agent in beer, to which they, beyond bitterness, impart floral, fruity or citrusy flavours and aroma. In the pictures below you will notice a yellow substance produced by the Lupulin gland. When picking hops, a good indicator that they are ready is that they will feel papery, almost dry. At this point, if you break them open they should be full of lupulin.

We have been drying hops for two days now. They are dried in a home made oast. I will share some pictures of our oast with you in another post.
