I just love my life saver slow cooker...

Yes. When you are working nights shift as a nurse over weekend and studying during the week and being full time mum and vegetarian can be a bit challenge sometimes to cook for everyone. I will tell you something slow cooker can save your life literally. I have my meal ready and I only need to cook to boys what they like to eat. However few months ago I rediscovered my slow cooker and started to make the most out of it. It is just so easy and simple to prepare meals using this genius equipment.

I will share with you my favorite dish. Pumpkin stew.

You just need:

  • Pumpkin (Thanks God to Jamie Oliver as once I had a pleasure to watch him cooking some genius dish and He was showing the quickest way of cooking pumpkin; by removing the seeds only and chopping literally the rest of #pumpkin !!! Guys i did not need to be told twice in this matter I took my few months old pumpkin and did exactly what he said, chopping with the skin, removing the seeds, during the cooking process especially in the slow cooker the skin will be soft that you will never say it was literally hard as a rock, and this for me was such a no no no to use pumpkin because I struggled big time to peel it. Now I do not need to bother myself with it. Loving Jamie Oliver even more ;) )
  • 2 potatoes (beautifully washed) as I do slice it with skin as well :)
  • 2 red onions, or any onions you have
  • lots of kale
  • carrots
  • spices ( chilli powder, corriander powder, garam masala, fennel seeds, mustard seeds, salt, pepper, all ofthe spices according to your personal taste)
  • red lentils ( I usually add the lentils when the veggies are nice and tender and leave all cooking at least for 30 minutes and all the stew should be ready)
  • water

And what else? Nothing. Just leave this all for at least 2 hours on high heat till all veggies are soft and tender and meal is ready to eat :)

The last touch with lentils or you can do without it.

P.S You can add any #veggies you like. The best part, as the food in the slow cooker is under the lid is cooking more than less without your attention being involved. Great time saver and most importantly I discovered variety of new way of cooking veggies. Delicious. Sometimes I add olive oil when is ready, serving with naan bread or eating how it is, as it is delicious :)
