Biryani is a classic and popular dish that has a special place in many people's hearts. This tutorial will guide you through the process of preparing delicious Biryani in the comfort of your own kitchen.

Ingredients:

Basmati rice (2 cups)
Chicken/Beef/Mutton (1 cup)
Onions (2, thinly sliced)
Ginger-garlic paste (2 tsp)
Potatoes (1, small, diced)
Green chilies (to taste)
Fresh coriander leaves (chopped)
Garam masala powder (cumin, cardamom, cloves, cinnamon)
Yogurt (1 cup)
Oil (1/2 cup)
Ghee (2 tsp)
Kewra water (optional)
Raisins and cashews (optional)
Beresta (optional, crispy fried onions)
Preparation Steps:

Wash and soak the rice for about 30 minutes. Then cook it until it's 70% done. Drain the excess water and set aside.
Clean and cut the meat into pieces.
In a bowl, mix yogurt, ginger-garlic paste, garam masala powder, meat, some whole garam masalas, and salt. Marinate for at least 30 minutes, up to 1 hour.
Heat oil in a pan and fry the sliced onions until golden brown. Remove half of them for later use.
In the same pan, add ginger-garlic paste and green chilies, and sauté until fragrant.
Add the marinated meat and sauté until it's browned and cooked.
In another pan, fry the diced potatoes until they are slightly golden. Remove and set aside.
Layer the marinated meat at the bottom of a heavy-bottomed pot, followed by a layer of half-cooked rice, fried potatoes, chopped coriander leaves, and half of the fried onions.
Repeat the layering process until all the ingredients are used up, ending with a layer of rice on top.
Sprinkle the remaining fried onions, chopped coriander leaves, and ghee on top of the rice.
Optional: Drizzle kewra water, and sprinkle raisins and cashews on top for added flavor.
Cover the pot with a tight-fitting lid and cook on low heat for about 20-25 minutes, allowing the flavors to meld and the rice to cook through completely.
Once done, let the Biryani rest for 10 minutes before gently fluffing it up with a fork.
Serve the Biryani hot, garnished with some crispy beresta, and enjoy the flavorful masterpiece you've created!
