I saw a news article today from CNBC claiming that bitcoin will be going to 500k in 2030 (can't remember the exact year). I wonder though, as people start using bitcoin and seeing how long transactions take and how high the fees are, wouldn't they switch to litcoin or ether? What is the benefit of using/holding bitcoin when there are better alternatives out there?

Wait and see what happens after the 1st of August. A soft fork will happen and there is also a chance of a hard fork. We could end up with a faster bitcoin in the future or get stuck with the old one.. so.. difficult to say at the moment. There are a lot of different scenarios and nobody really knows what is going to happen. I guess a few weeks after this date you have a few of the answers you are looking for.
