Here's an easy recipe for bruschetta that could be used as a party shareable or an appetizer before a tasty Italian dinner! Enjoy!
Ingredients
1 baguette, cut in half length-wise and toasted
2 tsp minced garlic (I use the kind in a jar)
3 T extra-virgin olive oil
0.25 cup grated Parmesan cheese
2.5 cups finely minced roma tomatoes
1⁄3 cup fresh basil leaf (thinly sliced)
2 T balsamic vinegar
0.5 tsp salt
1 tsp fresh ground pepper
Directions
Add the tomatoes, garlic, basil, vinegar, olive oil, cheese, salt and pepper.
Mix thoroughly and let sit for 15 minutes at room temperature to let the flavors marinate.
Slice the bread, in half length-wise, then into individual pieces, toast, and spoon the mixture on top.
