Chicken Egg Paratha Roll is a delicious and filling Indian street food dish made with spiced chicken, scrambled eggs, and a flaky paratha. Here's a recipe to prepare Chicken Egg Paratha Roll:

Ingredients:
For the chicken filling:

250 grams boneless chicken, cut into small pieces
1 tablespoon oil
1 teaspoon ginger-garlic paste
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala powder
Salt to taste
Fresh coriander leaves, chopped (for garnishing)
For the scrambled eggs:

2 eggs
Salt to taste
Pepper to taste
1 tablespoon oil
For the paratha:

2 cups whole wheat flour
Salt to taste
Water, as needed
Oil or ghee for cooking
For assembling the roll:

Onion, thinly sliced
Tomato, thinly sliced
Cucumber, thinly sliced
Mint chutney or any sauce of your choice
Instructions:

In a pan, heat oil and add ginger-garlic paste. Sauté for a minute until fragrant.
Add the chicken pieces and cook until they are no longer pink.
Add red chili powder, turmeric powder, garam masala powder, and salt. Mix well to coat the chicken with the spices.
Cook the chicken until it is cooked through and the spices are well combined. Remove from heat and set aside.
In a bowl, beat the eggs with salt and pepper.
Heat oil in a pan and add the beaten eggs. Scramble the eggs until they are cooked through. Remove from heat and set aside.
In a large mixing bowl, combine whole wheat flour, salt, and water. Knead to form a soft dough. Let it rest for 15-20 minutes.
Divide the dough into small lemon-sized balls. Take one ball and roll it out into a small circle.
Heat a tawa or griddle over medium heat. Place the rolled-out paratha on the hot tawa.
Cook one side of the paratha until you see small bubbles forming, then flip the paratha.
Apply oil or ghee on the cooked side and cook the other side, pressing gently with a spatula, until both sides are golden brown.
Remove the cooked paratha from the tawa and set it aside.
To assemble the roll, place a paratha on a flat surface. Spread some mint chutney or sauce of your choice on the paratha.
Layer the cooked chicken filling, scrambled eggs, sliced onion, sliced tomato, and sliced cucumber on one side of the paratha.
Sprinkle some fresh coriander leaves on top.
Roll the paratha tightly from one side, enclosing the filling.
Wrap the roll in a parchment paper or foil to secure it.
Repeat the process with the remaining parathas and filling.
