Hello friends. Here back in this opportunity I want to invite you again to my land Venezuela, specifically to the Caribbean River, Sucre State. Land where the best cocoa in the world is produced, with excellent aroma and flavor. Here in this town there is currently a movement of artisan chocolatiers, of which I am a founding member, I am in charge of looking for the necessary courses for the formation of the group and thus our product better.

In my country Venezuela we are known for producing a fine cocoa of aroma and flavors, in what we can mention: aromas and flavors of fruit, flowers, nuts and malt. This is the characteristic flavor of the fine aroma cocoa that differentiates it from the other cocoas in the world.

Fine aroma is a classification of the international cocoa organization (icco) that describes a cocoa of exquisite aroma and flavor. This type of cocoa represents around 8% of the cocoa production in the world. The main countries where they can be obtained are: Colombia, Ecuador, Venezuela and Peru, 76% of the world's fine aroma cocoa is produced.

Creoles, Trinitarians and Outsiders.
The cocoas come mostly from Creole and Trinitarian cocoas, which are different in terms of aroma and flavor to the alien-type cocoas. The Trinitario cocoas, very much desired in the world, are fine cocoas of aroma, of soft and aromatic flavor. The trinitario variety is the result of the crossing of the varieties of criollo and foreigner type and they are produced mainly in Colombia, Ecuador, Peru and Venezuela., The stranger cacao is the most common in the world, it is resistant to the climate and its flavor is acid and astringent. This is the typical African cocoa.

It is not a secret that Venezuelan cacao is the best in the world, we say that thanks to it we produce quality products and experts say it worldwide, but do you know the types of Venezuelan cacao ?.
In the first place, it is necessary to point out that in Venezuela different varieties of cacao are cultivated: the Creole, the foreigner and the trinitarians (which is a cross between a Creole cacao with an outsider and comes from Trinidad).diversidaddelcacaovenezolano.jpg

The Creole is the variety of cocoa native to Venezuela, which in turn has these 3 varieties: 1. Cacao Guasare: It is located south of Lake Maracaibo. Currently, their plantations are quite small. It is characterized by a thin and moderately rough green shell fruit. It is a cocoa of excellent quality. 2. Cocoa 3. Chuao: Perhaps the best known in the world and cultivated in the region of Chuao in the State of Aragua. It is qualified as fine cocoa. 4. Porcelain Cocoa: It is grown in the south of Lake Maracaibo and in the Andean states. It has a very particular flavor and is classified by the experts as an extra fine cocoa. It is considered to have the best genetic quality of all the cocoas grown in Venezuela.
