Freeze drying is a special drying process that aims to increase the shelf life of a product, preserving its nutritional and organoleptic characteristics almost completely. Freeze-drying consists of removing water from a liquid, pasty or solid product by freezing or freezing and vacuum evaporation. When heating the water in a solid state and at a very low pressure, the water sublimates and passes into the gaseous state (water vapor). This water vapor that is released from the solid product is trapped on a condenser or trap.

This technology allows not to alter the quality of the product that is freeze-dried. It is the only drying method that perfectly preserves the molecular structure of the different molecules that make up the product.

The actual freeze-drying process begins with the freezing of food, which is brought to a temperature between -30 and -50 ° C. This first step is necessary to block the degenerative processes of the food. Subsequently, it proceeds with the drying under high vacuum. The whole process, which exploits the physical and chemical properties of water, takes place in controlled environments and takes the name of cryo-drying. The packages are then hermetically sealed, in order to maintain the degree of dryness achieved. The complete dehydration of the food, as well as not altering its original characteristics, allows you to obtain products (lyophilized) of much lower weight and volume (from 1/4 to 1/10) than the starting food. A freeze-dried food thus provides significant advantages also in transport and storage operations.

In English the freeze-drying process is defined as "freeze drying" which best describes the cold-drying process, to which the food is subjected.
