Ingredients:
- 160ml double cream
*9oz cream cheese
*9oz creme fresh or fromage frais
*3oz icing sugar
*2.5oz butter
*11oz white chocolate
*14 plain digestive biscuites
*200ml baileys
Method:
*line a tin with baking paper and butter to stick it.
*crush biscuites until fine crums.
*melt butter and add to biscuites then mix together.
*put biscuit mixture into tin and press down with a small flat based bowl as much as possible to make a flat biscuit base.
*next you need to wisk together cream, creme fresh, cream cheese and icing sugar until it forms peaks, once forming peaks wisk in the baileys.
*melt white chocolate and add to cream mixture. Make sure to mix in properly and then pour mixture ontop of biscuit base.
*put into fridge for at least 3 hours to set and then its done.
This makes 8 decent sized portions. You can also make different flavoured cheesecakes with this same recepie, try dark chocolate and brandy and you can also make you own toppings for it. I used melted dark chocolate which is drizzled onto baking paper and chilled until set. If you do try something different let me know in the comments what you came up with😊
