• Cook and shred 2 lbs boneless, skinless chicken breast
• In a bowl, combine the chicken with 1/2 cup mayonnaise, 2 stalks celery (diced), 1/4 cup diced red onion, 2 tbsp lemon juice, 1 tsp Dijon mustard, salt and pepper to taste
• Stir everything together and chill for at least 30 minutes
- Greek Chicken Salad:
• Cook and shred 2 lbs boneless, skinless chicken breast
• In a bowl, combine the chicken with 1/2 cup plain Greek yogurt, 1/4 cup diced red onion, 1/2 cup diced cucumber, 1/2 cup pitted Kalamata olives, 1/4 cup crumbled feta cheese, 2 tbsp lemon juice, salt and pepper to taste
• Stir everything together and chill for at least 30 minutes - Curry Chicken Salad:
• Cook and shred 2 lbs boneless, skinless chicken breast
• In a bowl, combine the chicken with 1/2 cup mayonnaise, 2 tbsp yellow curry powder, 1/4 cup raisins, 1/4 cup diced red onion, 1/4 cup chopped almonds, salt and pepper to taste
• Stir everything together and chill for at least 30 minutes
