Ohhhhh, the Best one-pot chicken dish I learned from Trinidad!
- Put a generous amount of oil in a deep pan and pour in 1/2 to 1 cup of brown sugar. Heat on high until "frothy".
- Brown the chicken (enough to fill the pan) well on both sides
- Pour over it a mix of cilantro, jalapenos and garlic (equal amounts or adjust to taste) blended in a blender until pulverized.
- Simmer on medium high until all cooked through(about 45 minutes), then thicken the juice with flour.
