finally got the chickpeas spinach fluffy pancakes — less water, more batter like!

Can’t tell you how stoked I am right now that I’ve managed to finally get to that elusive batter zone on the chickpea pancakes. This mix was completely the other way from where I normally function at with more water and I think I could have put a little bit more water in but it’s definitely about the batter styli over the water styli, get the water wrong and they simply don’t rise.

For like nearly three weeks now I’ve been trying to perfect the ‘outta eggs’ pancake and wanted to really see what kinda things I could make with besan flour, basically ground up chickpeas and boy oh boy are these great, with something sweet like honey or maybe even sweet chilli these are different kind of morning savoury snack.

I mean seriously, look at the fluffy on this thicc boy! — these things are so easy to make as well and I don’t measure anything really just go on the visual of the nutribullet small cup that I use, you can easily rustle up like a handful of them from around 60-80 grams of besan/gram flour.

In my pancake mix I’ve got the flour, baking powder, red pepper flakes, garlic powder, pepper, salt, spinach powder (you could use a protein powder too I guess) and I blitz that up in the nutribullet for about 30 seconds until I’ve got a batter.

Super easy, super filling, a different kind of breakfast when you run out of eggs and the store does not have any either.

Kinda pumped.

Oh my goodness!
In my country (Venezuela), chickpea is very expensive.
Perhaps another legume can serve, it would be necessary to prove.
