Cool the mixture in the freezer and put it in the ice-cream churner to set. To make the caramel sauce, place sugar and water in a saucepan on medium heat. Slowly whisk in cream and vanilla. Keep whisking, till the sauce thickens and develops a glossy finish. Put pitted dates in hot water and set aside. Next, mix together brown sugar, butter, egg, vanilla paste, flour, cinnamon and a pinch of sea salt. Slowly add in the dates with the soaking water. Fill greased pudding molds 2/3 full of the mixture. Bake at 350 degrees for 18 minutes. To plate, put some salted almond crumbs, the pudding and a scoop of vanilla ice-cream. Salted Caramel Chocolate Fondant with Vanilla Ice-Cream & Orange Marmalade Sauce
This is the ultimate chocolate dessert that can turn any ordinary meal into an extraordinary culinary experience. Set the ice-cream churner to precool. Start off with making the anglaise for the ice-cream. Scrape a vanilla pod and add the vanilla bean in the anglaise mixture. Strain the mixture and put back on the heat, till it thickens. Cool the mixture in the freezer and put it in the ice-cream churner to set. Next, start making the salted caramel for an oozing center of the fondant. To make the caramel sauce, place sugar and water in a saucepan on medium heat. Add 1 tsp of good-quality sea-salt. Slowly whisk in cream and vanilla. Keep whisking, till the sauce thickens and develops a glossy finish. Set it to cool and put the mix in a piping bag. Next, melt the dark chocolate and butter in a double boiler. In a separate bowl add in eggs, sugar and beat it till it gets a fluffy and airy consistency. Fold in the melted chocolate and sieve in flour. Grease your fondant ramekins with butter, castor sugar and cocoa powder. Pour the fondant mix in the molds and put it in the refrigerator to cool for 15 minutes. Next pipe in the salted caramel mix in the center of the fondant. Bake for 15 minutes, until the outer edge, is cooked. Put 2 freshly squeezed orange juice and sugar in a pan. Add in some orange zest and orange marmalade and keep stirring in medium heat, until the sauce thickens. To plate up, put some hazelnut crumb on the plate, place the chocolate fondant and the ice-cream. Serve the Orange sauce in a sauce jug.
