One day later. The oyster mushrooms grow fast. Comparing with yesterdays size.

The reason the stems are too long is because of lack of oxygen and too much CO2.
Better to make holes in your container to let air get through.

What's that at the bottom of your container? Is it expanded clay?

It's called akadama. It's a Japanese baked clay used for bonsai. You can also use perlite.

Are the mycelium growing only in coffee? or is there anything else in the substrate?
