Coffee's of the world -Thailand Doi Chaang Estate Arabica Coffee with me @c0ff33a ☕️

It's been 27 days since my last coffee of the world post - seriously am I that lazy? This last month though on Steemit - is it just me or has this platform kicked up a gear or two - the content has just grown and grown and I love the diversity and incredible quality you are all all sharing. So for tonights post I would like to share a really special coffee to me, Thailand grows some amazing coffee but it is also limited -once the crop of the year is gone it takes another year for the next to grow and be cultivated.

You can not beat a bit of art on a coffee sack, when the latest shipment of green coffee arrived I was very keen to get at this sack. This particular pallet had a few boxes on - these boxed coffees have vacuum sealed bags of 12kg each - the coffees are from Speciality Estates , they are extremely high quality so are quite expensive.

But this post is going to be all about that lovely Thailand Doi Chaang estate coffee, this Arabica is very good with some amazing flavours - with orange like citrus flavours, a hint of cut fir and even dark chocolate. Let's look at the green beans first

Look good don't they, but before we can taste these we have to roast them - so into my coffee roaster they must go!

Now we have to wait, 12 minutes to roast this coffee from green to a lovely light brown colour.

Once we get close to the coffee being ready - we can see the change in colour.

And then we have the magical moment when the roasted coffee is released into the cooling tray, a fan underneath the roaster sucks air through the roasted coffee and blows it out of the exhaust flue.

I'm really excited to try this new batch of Thailand Doi Chaang coffee, it is well over a year since I last had some - the crop is very limited from them and once it sells out no more until next season. I hope they still have some more left when I next order from this broker, I'm starting to think I should have bought two sacks!

Just look at those lovely roasted beans, so tasty looking you could almost eat them. In fact some people do, I have crunched a few now and again - you don't want many of these though!

Let's get onto brewing the coffee, this week I'm changing brewing method - we are going to use the Hario V60 dripper brewer with an unbleached filter paper. Gold standard for brewing drip filter is 75g per 1.8litre, I'm going to brew just under 1 litre so go for 30g weight of ground coffee.

Let's add some water heated to 90 degrees Celsius and watch it drip

With the drip brewing method - we keep topping up the water as it drains through into the jug below until we have sufficient liquid coffee in the jug.

Can you smell it? Well trust me it's heavenly, such an amazing complex aroma - I can not wait to dig in! But first - we must learn more about this amazing coffee from Thailand - so let's check out the slides from the coffee Broker I purchased this coffee from.

So now it's time to finally taste this wonderful brew, that I have waited so long to taste again. The dark chocolate and citrus flavours are calling me - and this time after a week of freezing temperatures, snow and ice I'm not drinking from a cup.

Straight from the jug it brewed in, delicious such a rich tasting flavour. Pretty much this is all I have been drinking since it arrived with me, fantastic coffee and when you hit that roast just right - developing flavours through First Crack and then dropping to cool before it get's too dark - just superb.

It is amazing how green coffee beans turned to delicious brown, and boy, I can only imagine how it smells so good all around!

I really enjoyed reading through this post. Not only for the coffee related content which I’m always interested in, but also the fantastic write up and Information you included as a part of it all. Coffee storytelling at its finest.

I actually signed up to a subscription coffee company a couple of years ago and was able to taste so many new blends and flavours of coffee that just don’t exist in the store bought stuff, it’s amazing what is out there!

Thank you very much, every coffee has it's own little story and I try and pull up as much information as I can from the Brokers I get it from. Coffee subscriptions are a good way to try many different coffee's, and often done by small Artisan roasters so the quality is excellent.

Yum, I can smell it clear over here on the other side of the world. Do you use 90 degree water for all your pour throughs? You make me want a real roaster! Do they have mini models? Yes, I totally enjoy your posts however rare they become. Thank you for all your support

I try to stick around the 90 degree mark, if you want to get really technical you can adjust the temperature either side and definitely find a perfect sweet spot temperature for every different coffee origin. But really I don't have that much time free to play like that. There are quite a few small domestic coffee roasters on the market - one simple fun unit is the Gene Cafe that uses hot air and and an off axis drum.

That is fantastic that you are importing this coffee from Thailand it is the most popular coffee here for Thai people i have myself enjoyed drinking the Doi Chaang coffee. I was introduced to this coffee by a Thai friend of my in south of Thailand and i remember having to wait in a line up for this coffee just wish they had more shops with this coffee it's truly a amazing tasting coffee. I must hunt down the Doi Chaang coffee shop in Bangkok now that you have bought it up :)

It's quite hard to get hold of in the UK, the Brokers only bring in a small amount and once that sells out we have to wait another year for the next cup. I'm pleased you have been able to try the coffee as well and enjoyed it, the quality is excellent and it has some amazing flavours to enjoy.

Understand...yep certainly a great coffee you always got to stand in line at coffee shops to get this awesome cupper...but worth it..😊

Careful you don't burn your lips on the rim of the glass coffee pot! There's nothing like the aroma and first taste of coffee in the morning to awaken one's senses!

My wife and I are planning on moving to Thailand once the kids graduate. We are looking at the Chiang Mai area, which is just south of where the coffee beans are grown. It will be cool to go there and see where they grow all these and take some pictures for you.

Another fabulous coffee post of your my dear friend @coff33a! The smell of the coffee grains released into the cooling tray is delicious.
I just wonder what do you do with the scoffer sacks? Do you collect them? Or do you recycle them? Just curious! 🤪

Thank you very much, you get a variety of smells when roasting coffee although most people says it's more like burnt toast then anything else! The coffee sacks will often be given out to my customers on request to decorate their shops, when I do build up a good stock I sell them ebay in 5's for a nominal amount so they can be made good use of.

The mountain Coffee of Northern Thailand stands with some of the best in the world it’s also got a nice social story as many hill tribes now grow coffee rather than opium poppy.

I have been off of coffee a bit lately, not sure why, but I found myself literally salivating when I watched the beans roasted and then dripped. Looks so good...I could almost smell it! And speaking of smelling, you are so lucky to be surrounded by those smells on a daily basis...I'm envious. It makes my heart so happy that these beans are not only fair trade, but the farmers are paid in excess of the suggested price and "were gifted 50% interest in the 100% funded Canadian company"! So awesome! That's the way the whole world should work, don't you think?! Also, the picture of the hillside on the company slides is breathtaking!

Thank you very much, week in and out I'm roasting all sorts of coffee from around the world. And of course even better then smells, I get to sample each roast I make to ensure it roasted correctly and tastes the same it did the last time I roasted it - consistency is key. Coffee growers are very ethical, and support for the farmers and processors is growing which is a positive step forward.

It's fabulous this way of coffee! I'm a coffee lover, but I have not thought about coffee in this long process. I really like the coffee bag, I think it's worth sitting on a wall like a painting. A very nice post about an activity that looks good because we don't know even the more unpleasant or heavy parts (if exist!). Excellent choice of GIF with Jeff!

Thank you very much, yes there is so much that goes into making a cup of coffee from growing the plant (It takes 3 to 4 years from growing a coffee plant from seed to actually see it bear fruit - which is one of the many reasons most coffee is still hand picked off the plants - once they do bear fruit they want to protect them as much as they can) Some coffee plants can be very plain, but others are quire different and vibrant - I do hang some sacks for decoration in my little roasting room. People make all sorts of decoration with coffee sacks - even making cushions and seats out of them!

I must thank you! Everything you say about coffee is fascinating. From now on, whenever I drink a coffee I will think of these things. It will definitely be better. My cup of coffee while reply to you:

OMG you are hilarious, and hard core! You have a special roaster for each type of bean, a special grinder for each type of grind, a special pot for each style of brewing... but no coffee mugs handy?
I have been using my whirlypop for years, but the smoke this last winter was getting to me. I am getting roaster envy... not just the fans but that lovely, even roast. I call each batch a "custom blend" because there is usually a little bit of everything from blonde to espresso in there!

I imagine the WhirlyPop is great fun if a little smokey, I have a customer who roasts a Voodoo blend which is the most uneven roast you have ever see - must be like yours from light roast to black and oily, his customers love it though!

Oh, Voodoo blend, I like that... sounds way more interesting than "custom blend..." lol!

These are the absolute best - not lying when I say I am tracking these and trying to slowly but surely follow in your taste journeys with some slightly smaller batch orders and hoping that, even without a roaster, I can experience some of the same exciting flavor notes and expressive coffees that you highlight, mate!

Thank you very much, some of my own coffee choices are market driven - because I sell all these coffee's in green and roasted form I tend to be offering many that are requested by my customers or that sell out consistently. Ethiopian Yirgacheffe and Nicaraguan Maragogype are by far the biggest sellers at the moment. Thanks for calling in, I will be doing a Colombian coffee next.

Thank you very much, but you are way too kind to me. Yes, I was drinking from the coffee jug, fortunately I don't brew with too hot water and the jug cools quickly so no burns. Plenty of amazing smells and tastes when I am preparing coffee, fortunately I have plenty around to sample between roasts. My offices are drying out finally now thank you, I just need an electrician to find the fuse box that has the fuse for the offices lights - being an old building there are in the region of 20 fuse boxes around the building and they are the ancient type with fuse wires in. The prep work that goes into making a great cup of coffee is totally worth it. I love tasting beans from all over the world -- but I'll admit that I don't quite have the palate to discern subtle flavor differences. Where would you say some of the best coffee you've tried is? It might be a bit of a vacation bias, but in my opinion, when I was in Australia last fall (north hemisphere fall), we had some of the best coffee I've had in quite some time. Some Woolloomooloo blend espresso (in a long-black) from Toby's Estate.

Thank you very much, I wouldn't like to say I have a best coffee because they are all unique and have their own special flavours. Australia grows a little coffee themselves, the Skybury estate coffee is excellent quality and really a great cup.

hello, how I would like to taste that coffee, I like it so much better than in an Italian coffee maker they are called here.the fire of a lifetime, I think the coffee is more intense and the aroma is wonderful.

Didn't realized that have coffee planted in Thailand and the name seems familiar. Then I remember there's one in Singapore but seems it's permanently closed.
