Pancit Canton

I am sharing this dish as my entry to Coin Gecko´s culinary challenge. It is actually a dish that most Filipino families serve for many occasions, be it gatherings, birthday celebrations. fiestas or beach party, etc....this dish is absolutely a hit.

The basic ingredient for Pancit Canton is actually noodles which originated from China... Many chinese migrated to the Philippines long before the turn of the 19th Century. Some produced this noodle and even traded this in the fresh market, some were sun-dried and offered in packs. To this date, the chinese noodles are still very popular in my country in whatever forms (fresh or dried) as they are available in the market.

This is a very easy to prepare dish and here´s how I make it:

Ingredients:

1 pack dried Pancit Canton Noodles (at Asian shops)
200 grams pork filet (or chicken breast would do)
2 cloves garlic, crushed
1 onion, sliced
1 bell pepper, cut into bite pieces
green beans, thinly cut, elongated
2 carrots, cut
1 celery stalk cut into pieces
2 cups white cabbage cut in strips
cooking oil
soy sauce
salt and pepper

Procedures:

  1. Cut the pork filet into thin strips, place in a bowl and add 1 tablespoon soy sauce to coat the pieces. In a hot pan with 2 tablespoons oil, stir-fry for about 2 minutes or til golden brown in color.... season with salt and pepper. Remove and transfer meat on a platter, set aside.

  2. Meanwhile, in the same pan, add 2 tablespoon cooking oil and fry the crushed garlic, add the onions til they become glossy. Add all vegetables including the cabbage strips and stir-fry for about 2 minutes, then add a cup of vegetable stock or water to cook further until all veggies are soft. Sprinkle with 2 teaspoons soy sauce season with salt and pepper according to your taste, set aside.

  3. Further, boil water in a casserole, dip all the noodles for a couple of seconds and quickly remove them to a colander to drip and remove excess water.

  4. Transfer the cooked veggies, the pork, the noodles in a bigger casserole that could accommodate all and carefully stir to blend all ingredients.. Season with salt and pepper according to your taste.

As I am on diet and avoiding carbs, you must have noticed that the quantity of the cooked vegetables surpassed the noodles here and that was intentional. You only have to double the packs to level up with other ingredients. Further, I do not eat sea foods so there are no shrimps in this dish, although you could add them here too, as you like. Simply coat the shrimps with soy sauce and fry them in a hot pan with 1 tablespoon cooking oil for 2 minutes or until its color becomes pale, then add this to the casserole and mix all carefully. Serve hot!

That looks delicious! I can't wait for winter to be over so that I can have fresh locally grown vegetables for stir fries again! The imported grocery store vegetables this time of year are simply not the same.

Ma’m ang sarap naman n’yan! Favorite food ko kahit na anong luto ng pansit! And we have the same style of cooking. I also can’t follow the right recipe, so I often have my own version to avoid food against my illness.. Have a nice day!

Thankies... hahaha..fave din yan ni hubby..pag narinig pansit go na go yan. At saka sa paborito naming chinese resto laging order niya fried noodles, di nagsasawa, lol!
