Colour Challenge: Wednesday Yellow - Homemade Lemon Burst Cookies

I think I love watching these cookies bake, almost as much as I love eating them.

In the oven they erupt like lava, turning from blobs covered in icing sugar to this incredibly textured cookie that's deliciously lemony, sweet and crunchy.
