OVERVIEW
Banga soup is soup in the southern and south eastern parts of Nigeria. The south call it BANGA while the east calls it Ofe Akwu.
MAJOR INGREDIENTS
Salt
Pepper
Onion
Water
Dry Fish
Stockfish
Meat
Palm Oil
Seasoning (Magi Seasoning Cube and others as deemed fit)
- Ogiri
- Palm Fruits/nuts
PREPARATION PROCEDURE
Boil the palm nuts at least for 1 hour until it gets soft.
Start mashing it with your hand in a bowl or pound it a little in a mortar to bring out the required oil liquid.
Sieve the oil and separate it from the kernels and chaff.
Steam the meat with 2 cubes of seasoning and salt.
Put the sieved oil on fire to cook for at least 45 minutes so that the oil will be thick a little.
Add crayfish, onions, the steamed meat and stock fish in the oil and allow to cook for 15 minutes.
Add the Ogiri to your taste
Add vegetable of your choice, preferably Ugu leaves or scent leaves as you wish.
Boil for a little moment and bring down from fire.
