Roll Pineapple Tart

Hi, here I am about to post my first home made roll pineapple tart,
Karena saya orang Asia dan memang sudah terbiasa dan suka banget sama makanan
Asia, sejak moved ke Canada jadi suka kangen makanan Asia, salah satu nya pineapple tart.
sewaktu masih tinggal di Indonesia, lingkungan saya banyak orang Chinese.
Dan seperti culture mereka, kalau Chinese New Year biasa menu mereka harus ada Nastar
(pineapple tart) dan itu adalah salah satu cookies favorite saya.
So, karena di town dimana saya tinggal sekarang agak susah buat cari pineapple tart di store,
jadi saya memutuskan untuk browsing di internet tentang bagaimana cara membuat
home made pineapple tart. can't help it, daripada harus nunggu pulang ke Indonesia biar bisa
makan pineapple tart.
and ini lah jadinya my first pineapple tart turns out so good, at least for myself.

INGREDIENTS

Pineapple jam filling:

-1 big fresh pineapple
-1 inch cinnamon stick (option)
-2 cloves (option)
-100 gram (1/2 cup) sugar
-1/8 teaspoon salt

Tart Crust/Pastry:

-300 gram (2 1/2 cups) flour
-30 gram (4 tablespoon) cornstarch
-250 gram (2 sticks unsalted butter) softened
-50 gram powder sugar
-2 egg yolks
-1/2 tsp vanilla essence
-1/4 tsb salt

Egg wash decorations:

-2 egg yolks, beaten for egg wash

INSTRUCTIONS

Pineapple jam filling:

  1. Using the blender, put in the pineapple chunks.
  2. Pour the blended pineapple into a pot. Add in sugar and cook on medium heat,
    until quite dry and there's no liquid visible in the pot.rool1.jpgroll2.jpg

Tart Crust:

  1. Cream together the unsalted butter, powdered sugar and salt. add in egg yolk,
    and beat until well mixed.
  2. Sift together the flour and corn starch. Add this into butter mixture and stir until well mixed!roll.jpg

Shaping and Baking:

Generously flour on the work surface. Work with 1/4 dough at a time. Form into disk.
Flour the rolling pin as the dough is a bit soft ans sticky.Roll into about 5 mm thickness.
Flour the rolling pin and gently roll it on the dough making it lines on it. Carefully take
one strip and flip it on. Place one jam log at one end and start rolling it with the dough
Cut excess dough if any and make it look neat and nice.
Place them on a baking tray with baking sheet. Gently brush with egg yolk. Bake at 175ºC (345ºF) preheated oven for 20-25 minutes or until bottom edges are golden brown and they're fully cooked. Cool completely on rack.roll4.jpg

According to my palet - I think this would go great with a Witbier.

oh really? maybe I have to try it with some Witbier sometimes 😉
