ADVENTURE 93: HOMEMADE CHICKEN RICE THICK SOY SAUCE
Aloha fellow steemians and welcome to another one of my fantastic adventures. For this post fellow steemians, I am going to share with you all a dish that I made, a homemade chicken rice cover in thick soy sauce. Now, everyone can cook this cuisine and I can tell you all that it is easy as ABC and a great dish to accompany you in this cold rainy seasons.
Before I gave you all the ingredients, a quick reminder, I basically cook base on my instinct and I don’t have any proper measurement for all the ingredients because for me, everyone has their own taste and I just cook whatever suits with me hahaha. Okay, let’s get to the ingredients, first of all, you will need chicken and it depends on you guys which part of the chicken that you like, but for me, it will be either the thigh because of the flavour and the breast. Besides chicken, you will need, rice, mushrooms, garlic, ginger, few tablespoons of oil, salt, pepper, chicken stock or the all in one Maggi seasoning, tamarind, thick soy sauce, and oyster sauce.
It’s basically pretty simple to cook this, first of all, pour few tablespoons of oil in the wok and after that toss in the ginger and garlic and cook it until the fragrant is out. Pour the chicken in but make sure to cut it into cube beforehand and wait until the chicken cook 70%. After that, pour water into the wok until it can cover the whole chicken, pour the thick soy sauce, oyster sauce, your seasoning and the all in one Maggi seasoning to your taste. Lastly, toss in the tamarind and simmer them all until all the ingredients being absorbed inside the chicken maybe 10-15 minutes.
Lastly, wash your rice and put in your rice cooker pot, don’t fill the rice with water just yet because you will be using the chicken sauce in an exchange with water but if the sauce is not enough for the rice, you can add few cups of water in it. Pour all the thick soy sauce chicken and mushroom together with the rice and let it cook. I found out that if you cook with an electronic rice cooker, the rice didn’t cook properly and therefore, you might need to cook it longer but for me, the best way to cook this kind of cuisine is definitely using firewood. Slow but yet, full of flavour. If you guys have any further questions regarding this recipe, do not hesitate to comment down below. Ohh, and I totally forgot, you can add some lap cheong or Chinese sausage in the cuisine as well. Don’t forget to write it in your steemit if you manage to cook it.
