I had some applesauce leftover so I had to use it up before it went off. I found this recipe for Applesauce Bread on Pinterest and it had a link so I followed that. I read all the information and recipe thoroughly (this is a long page with a lot of 'extra' information), and decided I had the majority of the ingredients.
The recipe called for all purpose flour, but I didn't have any plain flour ; I used the old bag of self-raising flour left from the Earl Grey and Lemon Cake. As expected I also used much less sugar. I read somewhere that you can normally reduce the amount of sugar by a quarter and it shouldn't affect the proportions of the cake.
Below you can see the result of this baking :

I liked this recipe because you just needed to combine most of the dry ingredients together in a bowl : flour, salt, baking powder and baking soda and spices. Then in another bowl you had to whisk the wet ingredients together : 2 eggs, applesauce, melted butter, and sugar :

You then mixed the ingredients altogether, poured into a loaf bread mold and into the oven to bake.
What I wasn't so keen about this recipe was the use of 'cups' rather than grammes when giving the measurements. I was particularly unsure when the instructions told me to add 1/4 of a cup of melted butter. It would be easier to give the amount in grammes and then specify that the butter needs to be melted.
I felt that this was a good ‘bread’ to remember for future reference. I thought the flavour would be enhanced by adding some chopped walnuts, so I chopped about 20g :

I tried not to chop them too finely.

I didn't add any demerara sugar to make the crust crunchier but I don't think that made any difference.
I was very happy with the result; the applesauce and walnut bread had a lovely colour and was well baked in about 40 minutes.

The first photo shows you my first slice. Many people spread butter on sweet breads like this one; I like mine just plain.
