1 whole medium chicken (1 5 kgs approximately)
Thyme
Oregano
Pepper

Preparation
Preheat the oven to 200 degrees Celsius.
First you must clean the chicken well. Although surely your trusted butcher sold it clean and ready to eat, there are always entrails, feathers and extra fat to take away, take care of that.
Once clean, dry it, it should not have water when putting it in the oven.
Season the chicken with thyme, oregano, salt and pepper at your leisure. Add a splash of olive oil and rub it well so that it is all coated with spices and oil. Do not forget to do this also with the inside of the chicken.
Put the chicken in a tray where it fits comfortably and covers with aluminum foil.
Put the chicken in the oven and cook for 45 minutes.
After this time remove the aluminum foil and turn the chicken with care not to make a disaster as it happened to a friend. Let it cook another half hour.
At this point, and depending on your oven, the chicken could be roasted. You can check this by inserting a stick in the flesh to see if blood comes from inside. If you have doubts let cook a few more minutes, always uncovered.
Once ready, turn off the oven and let it rest for 10 minutes.
Now simply put your delicious roasted chicken on a wooden board and cut it as you wish. The common thing is to separate the wings, thighs, chicks and chop the breasts in 2 or 4 pieces.
