While I am mostly Vegan I have to admit that I do eat meat but very sparingly when not at home. That said our home is completely Vegan and my wife and oldest daughter are completely Vegan as well. It took some time to find really good recipes and one thing that many Vegan's bring up is the oh so loved bacon that they miss. In my wife's case it was a BLT that she wanted, so it was more the texture need than the flavor but I have to say other than being a bit sweeter than bacon it hits on taste and texture.
Vegan Smoky Bacon Recipe:

INSTRUCTIONS:
- Rinse carrots and slice, lengthwise, using a mandoline (or anything that will slice thin strips).
- Lay the carrot strips on a baking sheet lined with parchment paper. Preheat oven to 350°F.
- Stir together remaining ingredients in a small bowl and then brush carrot strips on both sides.
- Place in the oven for 10 - 15 minutes, or when the carrot strips are wavy and brown on the edges.
Great for Vegans but also great for those that just want a snack or bacon fix without all the grease. Let me know if you try this out and what you think.
