This is my uncles chicken his name was Dale, I never really knew my uncle because he lived in the UK and I live here in Newfoundland. And unfortunately I never met my uncle or not that I can remember at least. All I can remember is hearing about him and that he owns a restaurant, and I can not for the life of me remember the name of his restaurant. But I can tell you his top selling meal was his chicken and if you make it you’ll see why! I remember being just 6 years old I lived in Alberta at the time. And my mom said we had a visitor it was my lovely nan the one who gave me that beautiful snowballs recipe and she baked all day that day. I remember her asking me if I wanted to help her cook, of course I said yes because I was 6 I was eager to do everything even if I hated it which didn’t happen much because when you were 6 how much did you hate? Not very much I would guess. But anyways I guess that’s where my love of cooking came from, anyways she was making supper from the time she arrived till 7:30 let’s just say we ate like kings and queens that night. Also that was my first time ever trying Dales chicken. My nan told me “the name of the chicken is actually chicken morfasso, but your uncle changed a couple things to make it his own and it’s easier to call it Dales chicken then chicken morfasso”. And that stuck it has become a family tradition to have Dales chicken every thanksgiving. And just the first taste of it you’ll know your in love and you will never get sick of this recipe it’s easy to make and the taste just makes you lost for words. I hope you enjoy this recipe as much as me and my family does.
Base,
4 large boneless chicken breast pound to tenderize. In a large bowl whisk together,
2tbsp—of grated Parmesan
2eggs
1cup— of whipping cream
Dip your chicken into flour then into the egg mixture. Sautee in hot vegetable oil until browned. When cooked pour off oil into a can and return pan to heat and deglaze with broth mixture down below.
Broth,
2 tbsp— of lemon juice
1/4cup— of butter
1cup— of white wine
3cups— of Chicken broth
(bring to a boil and then let simmer. Pour wine broth over the chicken when served. excellent with baked or mash potatoes in my preference mashed Tastes better)!!
