Home made cracklins

I’ve been eating clean all week mostly salads and minimal animal protein well today I had a real hankerin for some flesh so I figured I’d whip up some cracklings was so excited I didn’t even bother putting away grocerie bags when I got home I went right to work trimming.

This is scraps the butcher normally throws away but I pay him $1 per lb to package it neatly with good choice pieces that have quite a bit of actual meat on them

Now these take time the key here is low and slow , cracklins are actually a by-product of rendering lard

A little Creole seasoning to taste And now it’s time to enjoy the final product

And on top of everything else I got a jar of lard that I can cook with later or use to make soap
