Living in South America I have been exposed to many things, and the custom of eating cuy (guinea pig) is no exception.
For me, the cuy journey began when we were living in a gated community. The houses were so close together we couldn't help but look out the windows into our neighbor's back yard. They had a fire going and music, the works. And then… what's that?! Cuy!
There was quite a crowd in their yard and so I would have thought that for the number of people they had they would have cooked up a lot of cuyes. But actually, to my surprise, 1 cuy is enough for 8-10 people. Cuy is quite expensive and so it is eaten as a delicacy.
This is one of the popular cuy restaurants in the town of Macas, Ecuador.
He told me that these are 20 dollars each. Wow!
This is achiote sauce mixed with other spices. Achiote gives the cuyes a nice golden color.
It was early in the day and no one was there yet.
