I don't know why we're killing these things and not welcoming them with open arms into our yards! Dandelions are YUM!

I picked these, rinsed off some soil, pulled them apart by hand, and heated them in butter before cooking them into eggs. Five minutes before this picture, that green stuff was growing in my yard.

Have you ever heard of egg florentine? It's eggs with spinach and cheese (I think Swiss cheese). The flavor of dandelions is really similar to spinach, but with a slightly tangy flavor.

I like lambs quarters even better than spinach in eggs.

Be sure to plant it out away from the house. Here it is considered a weed, and is hard to kill, which suits me fine, ROFLOL!
@mericanhomestead says that Egyptian Spinach is a vine spinach that grows well in heat. They harvest in the summer when the regular spinach is gone! I plan on planting some once we have moved!

If we didn’t have a dog, I would consider it! Actually, last year I was surprised we didn’t have much for dandelions. We had a lot of thistle though, and some other weed I don’t know the name of. At least dandelions don’t hurt when you walk on them.

Ahh, that makes a lot of . We don't have dogs, so I don't think of those kinds of things. We had em growing up and I don't want to have to take care of something like that yet. Kids and chickens are plenty of work for me 😂
