Meatloaf Pizza Casserole - with jalapenos and habaneros!

I usually leave a section with just cheese and sauce for contrast. Looks like more cheese than it is. I use a very thin shredder so an ounce and a half of cheese spreads out really well.
Toppings
- meatloaf (or other left over meat)
- a bit more than an ounce of cheese (finely shred)
- cabbage
- tomato sauce
- jalapeno and habaneros to taste
And for the crust:
- oats (crushed)
- corn flower (or grits)
- spray oil
- dice up some of the sautéed cabbage
The meat should be prepared before hand. Onions and diced tomatoes are also a good addition.
For the crust, just crush the oats and add the corn flower and sautéed cabbage (see next paragraph). Add water, but stop when it becomes watery. Spray the bottom of the baking dish and spread out. Make sure to moisten the top so it does not dry out. Sometimes I also spray the top. Cover with foil, also to keep from drying out. If you're not concerned with calories, feel free to use olive oil.
Add the toppings once you're satisfied with the crust. I usually go with a golden brown. The cabbage should be lightly sautéed, so it will still be producing some steam in the oven. I also sauté the peppers with the cabbage (at the end). Let everything except the cheese heat up nicely in the oven under the foil. Finely shredded cheese will melt quickly. I do not like it to brown too much. One trick is to add oil to the top, but since I do not want to add these calories, I just take care to not over cook.
This is how it looks without cheese. Its actually only a couple of small pieces of left over meat loaf broken apart. There is a lot more cabbage in the mix. Cabbage makes up the crust as well.
