#10daysofchristmas DAY 3. German Black Forest Beef. Consulting with Jürgen staying with us at the moment, he said that there wasn't typical German dinner except maybe a roast duck or something, so I decided to Germanify roast beef. #homekill bolar roast, sous vide for 7 hours at 60°C, then encrusted in a rub I made- oregano, salt, pepper and Costa Rican cacao nibs (hand delivered from the plantation), all ground into a dust. Served with red wine and berry jus. I know, I should have done glühwein but Im doing #Jólaglögg instead. Thanks #iceland, see you on day 6 or 7. #merrychristmas!
