Minerals, unlike vitamins, are not manufactured by vegetable plants. A food's mineral content is completely dependent upon the soil content. Thus the vitamin content of the celery you eat is similar whether that celery was grown in the soil of Maine or Illinois or Timbuktu. But not so for the minerals contained in celery. if vegetables you consume were grown in organic mineral rich-soil and the water you drink is taken from sources plentiful in minerals, you are very likely to acquire a good mineral supply.
