From time to time I watch videos about baking and cooking on blogs or YouTube.
One of my favorite channels on YouTube is Foodwishes with Chef John. He keeps his videos simple and clear - besides, his comments are sometimes worth watching in the video alone 😉
This recipe is from Chef John and I would like to share the 'Meatless Meatballs' (as he calls them) with you today. But I would just call them tasty mushroom patties 😊
I made the patties for Christmas last year and again this year. They just taste wonderfully spicy.
The first part of the holidays is over and I have documented these patties for you. You can serve them alone as a side dish, make small meatballs or process to a hamburger patty.

These are the ingredients for about 8 small thalers:
500 g mushrooms (white or brown)
2 tbsp olive oil
a little salt for frying
1 tbsp butter
1/2 cup sliced onions
4 small chopped garlic cloves
1/2 cup of instant oatmeal
1/2 cup breadcrumbs
1/4 cup chopped fresh herbs (for example parsley)
30 g of finely grated Parmesan cheese (preferably fresh)
about 1 teaspoon salt
pepper
Cayenne pepper at will
A pinch of dried oregano
2 eggs
So prepare the sweeties:
Wash mushrooms.
Cut the mushrooms into small pieces - about pea-sized. You do not need to be specific. Just chop it up.
Fry in a pan with a little salt and olive oil to extract the water. Fry and stir at medium to high speed until the water evaporates and the mushrooms are dry.
Then add a generous piece of butter and turn.
Once the mushrooms are browned, add the chopped onions and fry until glassy. Add the finely chopped garlic and turn over.
Turn off the heat and stir in the oats in the still-warm pan.
Then put everything in a bowl and let cool. It is important that the mixture cools down so that the cheese does not melt immediately and mix well with the mushrooms.
Once the mushroom mixture has cooled, stir in the cheese, breadcrumbs, salt (careful! Mushrooms were already salted and the cheese is also salty), pepper, cayenne pepper, oregano and fresh herbs.
Stir in an egg well.
Mix the second egg well afterwards.
You can make this mixture as you like and then either roast, bake or cook in sauce like a meatball.
I prefer to prepare these patties a day before and leave them to rest in the fridge. The texture of the mushrooms changes slightly and the aromas combine even better.
Whatever you decide on - you will surely taste it! 😊
