When baking you can reduce the sugar content by 25% and it won't have any affect on the taste, texture or appearance. There may be a slight difference if you spend a while comparing them but nothing major. I looked at sugar for my home economics coursework, the different types, what it does, our daily limits and the affect sugar has on certain baking products.
