Some days I feel so lucky. Sitting in the sun, having lunch on the beach, feeling like you're on vacation, sipping Sangria - all in a day's work. That's what I did yesterday in the midst of my busy day.
Yesterday, I was able to visit the DiLido Club at the Ritz-Carlton in South Beach. Their chef, Jeff McInnis will be on this year's Top Chef, so he will be making headlines soon enough. Let me tell you, this chef is extremely talented and his culinary creations are out of this world, and they are healthy too. Yes, you heard that correctly. In a time, where cream and butter are an added necessity, this 'Top Chef' values sound nutrition as much as he values good taste. He creates a menu without any extra added butter, oil or cream, and it tastes delicious. Now that's a challenge!
The Mediterranean based or "sun cuisine" includes such delicious selections as: Seared Haloumi Cheese, Heirloom tomato salad, Chicken under a brick with crispy lemon chicken, artichoke and cucumber raita, and Pomegranate Glazed Duck Breast with curried peach and spiced pumpkin almond fritters.
In addition to the fabulous cuisine, the view from the restaurant is incredible - it can't be beat.
