Although summer seems to be taking it’s own sweet time getting to where I am, I just couldn’t wait to enjoy some ice cold beverage. When winter dominates most of the year, you enjoy even the hint of warm weather or the promise of it. The following drink is somewhat healthy but can be made even healthier by substituting the icecream for some peach, vanilla or even plain yogurt. But in my mind, occasionally we can enjoy the not so healthy stuff as long as it is in moderation The mint in this drink really gives it a refreshing taste! This drink is great served with some spicy food as it will cool down your tongue when it is on fire. Enjoy your summer Minty Peach Shake
Serves 1
Ingredients:
4-5 Peach Halves, canned or fresh
1-2 scoopes vanilla icecream
1 cup plain soy milk
fresh mint leaves
Honey, if required
In a blender, place all the ingredients and blend until desired consistency is achieved. Serve as is or over some ice. Garnish with mint leaves.
